Tuna and white bean salad

For this recipe we have chosen two items that you can store in your pantry any time of the year. More exactly: canned Losos tuna and jars of Naturavit boiled beans. A classic and easy combination!
We suggest using tuna chunks in oil. Tuna in its own juice will also work but you will need to add more olive oil afterwards. You will also need something green, for the fresh note, whether it's mint, parsley or arugula. You can also use cilantro, tarragon or rosemary. A little tabasco or hot peppers will give the salad a little sparkle.

INGREDIENTS FOR 4 PORTIONS

  • 1 cup chopped red onion
  • Zest and juice of 1 lemon or 2 limes
  • Two cans of Losos tuna pieces in oil
  • 1 jar of Naturavit beans. The choice is yours: you can use any of our varieties, whether it's small beans, giant beans or red beans.
  • 1/2 cup chopped parsley or arugula or 2 tablespoons thinly sliced mint.
  • A few dashes of Tabasco sauce or 1 chopped hot pepper or 1 teaspoon red chili flakes.
  • 1/2 teaspoon freshly ground black pepper
  • Salt and extra virgin olive oil, to taste.

METHOD OF PREPARATION

Drizzle a little lemon juice over the chopped onion before you prepare the other ingredients. This will make the onion taste a little lighter.

Combine the ingredients in a bowl:

Drain the oil from the tuna and place in a large bowl. Add the beans to the tuna and toss gently to combine. Add the onion, herbs, black pepper, lemon zest and lemon juice and mix. Add Tabasco or chili to taste.

If the salad needs more acid, add a little more lemon juice. If the salad seems a little dry, add a little extra virgin olive oil. Add salt to taste.

Cool the salad a little before serving and enjoy a light and healthy meal!
