Pea cream soup with mint
You don’t have anything for dinner? Don't panic, if you have a can of Naturavit peas and frozen potatoes in the pantry, this comforting pea cream soup with mint will be on the table, ready to serve, in less than 20 minutes. We never leave the store without a can of peas or a jar of Naturavit peas. They are convenient, delicious and come in handy countless times.
INGREDIENTS
- 1 tablespoon of olive oil
- 1 medium onion, sliced
- 2 medium potatoes, diced
- 3 ¼ cups (750 ml) vegetable soup
- 4 cups (600 grams) of canned peas or Naturavit jar
- salt to taste
- 1-2 tablespoons of fresh mint leaves
- black pepper, to serve
Gasket (optional)
- 3 tablespoons boiled peas (reserve them before stirring the soup)
- 1 tablespoon of extra virgin olive oil, until sprinkled
- 2 tablespoons of grated parmesan or shredded feta
- 1 tablespoon of sesame seeds or other seeds of your choice
METHOD OF PREPARATION
- Heat the olive oil in a large pot over medium heat. Add onion and sauté for about 5 minutes until soft and translucent.
- Add the potatoes and vegetable stock and boil them together. When they reach the boiling point, reduce the heat, cover with a lid and cook for 10 minutes, or until the potatoes are tender.
- Add the peas and cook for another 5 minutes (no more, otherwise you will lose the fresh flavor and beautiful color of the peas).
- Turn off the heat, season with salt and pepper, add the fresh mint leaves and let cool for a few minutes.
- Carefully transfer the contents to a blender. Depending on the consistency you want, you can add some vegetable stock or water to thin it out.
- Taste, make sure you're happy with the taste and serve with black pepper, a drizzle of extra virgin olive oil and some Parmesan or crumbled feta if you like.
